BINGHAM RIVERHOUSE WELCOMES NEW RESTAURANT CONCEPT

The riverside Richmond hotel welcomes award-winning executive chef Vanessa Marx to the newly named ‘Riverhouse Restaurant’

Founded by wellbeing expert and entrepreneur Sama Trinder of bhuti, this charming riverside restaurant with rooms is one of the only black female-owned hotels in the UK and has been owned and operated by the Trinder family for 40 years.

Alongside her leadership team, Amy Braund and Ricardo Barros (both Riverhouse managers who have worked for the company for over 9 years), Trinder champions women in hospitality at every turn - Marx is the latest in a line of visionary women to take a leadership role at Bingham Riverhouse.

Passionate about the healing power of food and its fundamental role in wellness and sustainability, South African born Vanessa Marx is leading a new culinary chapter for the business.

Marx’s culinary journey in Cape Town reached great heights; co-founding Dear Me Food World, a three-level culinary haven, she went on to earn the Eat Out Rising Star Award, propelling her career into television appearances and guest judging on Celebrity MasterChef South Africa. Vanessa also successfully launched her own catering and events business before relocating to London where she soon discovered Bingham Riverhouse and has spent the last two years running Bingham’s kitchen for private events.

The new neighbourhood restaurant concept brings the dining at Bingham Riverhouse back in-house and, stepping away from its Steven Edwards’ fine-dining menu, seeks to showcase a seasonally changing menu in a more relaxed and approachable atmosphere. The restaurant is open to hotel guests, members of the club and the public.

Dedicated to sustainable practises and 'slow foods', The Riverhouse Restaurant dishes feature the most consciously sourced produce and ingredients foraged in harmony with the seasons and local environments. Marx promotes a zero-waste ethos, and the menu highlights wild and foraged ingredients, as well as some of their very own garden-grown botanicals. Innovative low-waste ingredients include coffee-grown oyster mushrooms, cultivated in the urban Rooftop Farm in Wimbledon, using waste ground coffee from the hotel.

Sample dishes include:

Dorset Nduja Croquettes

Coffee-grown oyster mushrooms, fermented nut & truffle cream on toast

-

Beetroot Gnocchi with parmesan. Pickled radish and vegetable crisps

Wild boar ‘bourguignon, mushroom barley risotto

-

Cacao torte with reishi, cranberry & macca

Kentish cobnut & olive oil cake with grapefruit and olive meringue

Vanessa Marx, Bingham Riverhouse executive chef, says: "Food has the power to tell a story, change the energy, and connect people. I cherish watching the seasons change in the UK, appreciating the incredible British produce and its growers. In this new world, transparency and sustainability are the currency, and I'm excited to continue this culinary journey at Bingham Riverhouse.”

Sama Trinder, co-owner of Bingham Riverhouse, adds: “We want to continue to empower women in business at Bingham Riverhouse and are thrilled to welcome Vanessa into her new role and watch her successfully lead the new restaurant concept at the hotel.”

In 2020, inspired by the changing needs of their guests and the community Trinder navigated the house into its next chapter. Bingham Riverhouse’s restaurant and 15 bedrooms were completely refurbished with help from the formidable designer Nicola Harding and has become a harmonious mix between easy living and private members house.
